However, the crisper tray only fits ~5 servings for specific recipes. It’s still substantial but certainly nowhere near “26 quarts.”

I experienced using a french door oven for over a year in a commercial setting. To be honest, there isn’t a significant advantage over the traditional dropdown design. (Though it’s undoubtedly better than the side swing door.)

And since there’s a drip tray, you don’t have to worry about manually scrubbing the bottom part of the machine. The drip tray will catch any food residue, which is, again, dishwasher safe!
As for the unit itself, after cooling it down, simply wipe it with a damp cloth and you’re done!
